Ingredients

Scale

? cup plain breadcrumbs

1 cup grated Parmesan cheese

4 cups chopped escarole or spinach

8 cups chicken broth

1 cup small pasta (such as acini di pepe)

Salt and pepper to taste

Instructions

Preheat your oven to 400?F (200?C). In a large bowl, mix ground meats, breadcrumbs, Parmesan, garlic, egg, salt, and pepper. Form into one-inch meatballs and bake for 20-25 minutes until golden.

In a large pot, bring chicken broth to a simmer with diced carrots and celery. Add cooked meatballs and greens; cook until the greens wilt (about 5 minutes).

Notes

For added flavor, consider adding fresh herbs like parsley or basil before serving.
