Instructions
- Preheat your oven to 400?F (200?C) and line a baking sheet with parchment paper.
- Wash the mini potatoes thoroughly and poke holes in each with a fork. Bake for about 30 minutes until tender.
- Allow to cool, then slice in half lengthwise and scoop out the insides into a bowl.
- Mix the scooped potato with sour cream, cheddar cheese, crumbled bacon, salt, and pepper until smooth.
- Refill the potato skins with the mixture, top with extra cheese if desired, and bake again for 15-20 minutes until golden.
