  • 1 cup farro
  • 3 cups vegetable broth
  • 1 cup fresh mushrooms (cremini or shiitake), chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse farro under cold water. In a pot, combine it with vegetable broth and bring to a boil. Reduce heat, cover, and simmer for about 30 minutes until tender.
  2. In a skillet, heat olive oil over medium heat. Add chopped mushrooms and minced garlic; saut? until golden brown (about 5 minutes).
  3. Drain excess liquid from farro if necessary. Combine cooked farro with saut?ed mushrooms and garlic in the skillet.
  4. Stir in chopped parsley and thyme, then season with salt and pepper to taste.
  5. Serve warm, garnished with additional herbs or a drizzle of olive oil if desired.
