- 1 medium onion, chopped
- 1 stalk celery, chopped
- 1 medium carrot, chopped
- 2 cups low-sodium chicken or turkey broth
- 1/4 cup all-purpose flour

- 1/4 tsp black pepper (adjust to taste)
- 4 tbsp unsalted butter
Instructions
- Rinse the turkey giblets under cold water and pat dry. In a saucepan, cover giblets with broth and bring to a boil over medium heat.
- Reduce heat and simmer for about an hour until tender. Remove giblets and chop finely.
