  • 10 cups stale bread cubes
  • 4 cups fresh spinach (or 2 cups frozen)
  • 1 can (14 oz) canned artichoke hearts, drained and chopped
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 1 cup sour cream (or Greek yogurt)
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • 2 tsp dried sage
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350?F (175?C). Gather all ingredients.
  2. In a large skillet over medium heat, saut? the onion and garlic until translucent, about 5 minutes.
  3. Add the spinach and artichokes to the skillet; cook until the spinach wilts, approximately 3 minutes.
  4. In a large mixing bowl, combine stale bread cubes with the saut?ed mixture. Pour in vegetable broth and sour cream while adding herbs, salt, and pepper. Stir until the bread is well coated.
  5. Transfer to a greased baking dish and bake uncovered for about 30-35 minutes or until golden brown on top.
  6. Allow cooling slightly before serving alongside your favorite main dishes.
