- 8 cups cubed sourdough bread
- 2 medium leeks, cleaned and sliced

- 1 tbsp fresh thyme, chopped
- 2 cups low-sodium vegetable broth
- 4 tbsp unsalted butter

- Preheat oven to 400?F (200?C). Spread sourdough cubes on a baking sheet, drizzle with olive oil, sprinkle with salt, and toast for about 10 minutes until golden.
