  • 6 cups day-old bread, cubed
  • 20 oz canned pineapple chunks in juice, drained
  • 4 tbsp unsalted butter
  • 1 cup celery, diced
  • 1 medium onion, finely chopped
  • 2 tsp poultry seasoning
  • 2 cups chicken broth

Instructions

  1. Preheat your oven to 350?F (175?C).
  2. In a skillet over medium heat, melt the butter. Add diced onion and celery; saut? until soft (about 5 minutes).
  3. In a large mixing bowl, combine the cubed bread, saut?ed vegetables, drained pineapple chunks, poultry seasoning, salt, and pepper. Mix well.
  4. Gradually pour in the chicken broth and some reserved pineapple juice until just moistened; stir gently.
  5. Transfer to a greased baking dish and cover with foil. Bake for 30 minutes; uncover and bake for an additional 10 minutes until golden brown.
