Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 2 cups pecans, chopped
  • 3 large eggs
  • 1 cup brown sugar
  • 1 tsp vanilla extract

Instructions

  1. 1. Preheat your oven to 350?F (175?C) and grease an 8×8 inch baking dish.
  2. 2. In a mixing bowl, cream together the softened butter and granulated sugar until smooth. Gradually add in the flour until well combined. Press this mixture into the prepared baking dish to form the crust.
  3. 3. Bake the crust for 15 minutes until lightly golden.
  4. 4. While the crust bakes, whisk together eggs, brown sugar, vanilla extract, and chopped pecans in another bowl.
  5. 5. Pour the pecan mixture over the baked crust and return to the oven for another 25-30 minutes or until set but slightly jiggly in the center.
