- 8 tablespoons unsalted cold butter, cubed

- 3 to 4 tablespoons ice water
Instructions
- In a medium bowl, whisk together flour and salt. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Wrap in plastic wrap and chill for at least one hour.
- Preheat the oven to 400?F (200?C).
- Peel and core fresh pears; slice thinly.
- Roll out chilled dough on parchment paper into a rough circle about 12 inches wide. Place sliced pears in the center, leaving about two inches around the edge. Sprinkle with sugar and ground ginger.
- Fold the edges of the dough over the pears towards the center, overlapping slightly.
- Transfer to a baking sheet and bake for about 30-35 minutes or until golden brown. Let cool slightly before slicing.
