  • 12 oz pork or chicken potstickers
  • 4 cups low-sodium chicken broth
  • 1 tbsp fresh ginger, minced
  • 4 cloves garlic, minced
  • 2 green onions, chopped
  • 1 cup carrots, sliced
  • 2 cups bok choy, chopped
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil

Instructions

  1. Prepare your ingredients: chop carrots and bok choy, and mince garlic and ginger.
  2. In a large pot, heat a splash of oil over medium heat. Saut? garlic and ginger until fragrant (about 1 minute).
  3. Pour in the chicken broth and bring to a gentle boil.
  4. Add carrots and bok choy; cook until tender but crisp (about 5 minutes).
  5. Carefully add potstickers; simmer for about 6 minutes until heated through.
  6. Stir in soy sauce and sesame oil. Serve hot, garnished with green onions.
