- 2 cloves fresh garlic, minced
- 1 medium onion, chopped
- 1 cup bell peppers (red or yellow), sliced
- 1/2 cup low-sodium soy sauce
- 1/2 cup pineapple juice (preferably fresh)
- 1/4 cup light brown sugar
- 2 tbsp rice vinegar
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Cut the chicken into bite-sized pieces and pat dry with paper towels.
- Season the chicken with salt and pepper.
- Heat oil in a large skillet over medium-high heat. Saut? the chicken until golden brown (5-7 minutes). Remove from pan.
- In the same skillet, saut? onions and bell peppers until tender (about 3 minutes).
- In a bowl, whisk together soy sauce, pineapple juice, rice vinegar, brown sugar, and garlic. Pour over the veggies.
- Return the chicken to the skillet; stir to combine and simmer for about 5 minutes.
