  • 1.5 lbs boneless, skinless chicken thighs
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 tbsp tamari or low-sodium soy sauce
  • 1 tsp cumin powder
  • 2 tsp curry powder
  • Juice of 1 lemon

Instructions

  1. Chop onions and bell peppers; mince garlic.
  2. Heat oil in a large skillet over medium heat. Sear chicken thighs until golden brown (about 5 minutes per side). Remove and set aside.
  3. In the same skillet, saut? onions and bell peppers until softened (about 5 minutes). Add minced garlic towards the end.
  4. Return chicken to the skillet; mix in soy sauce, cumin, curry powder, and lemon juice. Stir to coat.
  5. Cover and simmer on low heat for about 10 minutes until flavors meld.
  6. Serve hot over rice or with flatbreads.
