- 1.5 lbs boneless, skinless chicken thighs
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3 tbsp tamari or low-sodium soy sauce
- 1 tsp cumin powder
- 2 tsp curry powder
- Juice of 1 lemon
Instructions
- Chop onions and bell peppers; mince garlic.
- Heat oil in a large skillet over medium heat. Sear chicken thighs until golden brown (about 5 minutes per side). Remove and set aside.
- In the same skillet, saut? onions and bell peppers until softened (about 5 minutes). Add minced garlic towards the end.
- Return chicken to the skillet; mix in soy sauce, cumin, curry powder, and lemon juice. Stir to coat.
- Cover and simmer on low heat for about 10 minutes until flavors meld.
- Serve hot over rice or with flatbreads.
