- 8 oz crumbled feta cheese
- 1 package (16 oz) phyllo dough
- 1/2 cup extra virgin olive oil
- 1 medium onion, finely chopped
- 2 large eggs
- 2 tbsp fresh dill, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 375?F (190?C) and line a baking sheet with parchment paper.
- In a large pan over medium heat, saut? the chopped onion in olive oil until translucent (about 5 minutes). Add spinach in batches until wilted. Remove from heat and mix in feta, dill, beaten eggs, salt, and pepper.
- Unroll phyllo dough on a clean surface. Brush one sheet with olive oil; layer another sheet on top. Repeat until you have at least six sheets.
- Spoon the spinach mixture along one edge of the phyllo dough; fold into a log shape or triangle, tucking in ends.
- Place on the baking sheet, brush with olive oil, and bake for 30-35 minutes or until golden brown.
- Allow cooling slightly before slicing and serve warm with salad or tzatziki.
