Ingredients

  • 4 salmon fillets (4 oz each)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tsp sesame oil
  • 3 cloves fresh garlic, minced
  • 4 cups kale, chopped
  • 1 cup rice (white or brown)
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 400?F (200?C) and line a baking sheet with parchment paper.

  3. Place salmon fillets on the baking sheet skin-side down. Brush generously with the glaze.

  5. In a skillet, heat olive oil over medium heat. Saut? minced garlic for 1 minute before adding kale. Cook until wilted (about 5 minutes).
  6. Prepare rice according to package instructions.
