  • 2 ripe avocados (about 400g)
  • 4 large eggs
  • 4 slices sourdough bread (about 240g)
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Bring a pot of water to a gentle boil over medium heat. Carefully add the eggs using a slotted spoon and cook for 6-7 minutes.
  2. 2. Prepare an ice bath by filling a bowl with cold water and ice. Once the timer goes off, transfer the eggs to the ice bath for 5 minutes.
  3. 3. While the eggs cool, toast the sourdough slices until golden brown.
  4. 4. Mash the ripe avocados in a bowl until creamy but still textured.
  5. 5. Generously spread the mashed avocado over each slice of toasted bread.
  6. 6. Peel the eggs, place them on top of the avocado toast, season with salt, pepper, and drizzle with olive oil before serving.
