- 2 lbs small Yukon Gold potatoes
- 1 tsp salt (for boiling)
- ? cup unsalted butter (softened)
- 2 tbsp fresh parsley (chopped)

- Olive oil for drizzling
Instructions
- Wash the Yukon Gold potatoes under cold water and scrub gently.
- In a large pot, add water and salt, then bring to a boil. Add potatoes and cook until fork-tender, about 15-20 minutes.
- Drain cooked potatoes and let cool slightly. On a parchment-lined baking sheet, smash each potato gently using the bottom of a glass.
