Description

Slow Cooker Lamb Tagine with Sweet Potatoes is a delightful Moroccan-inspired dish that combines tender lamb, sweet potatoes, and aromatic spices for a rich and comforting meal.


Ingredients

  • 2 lbs boneless lamb shoulder
  • 2 medium sweet potatoes (about 1 lb), peeled and diced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp ground cinnamon
  • 2 tsp ground cumin
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup low-sodium vegetable broth

Instructions

  1. Prepare your ingredients by chopping the onion and garlic.
  2. In a skillet over medium heat, saut? onions in olive oil until soft. Add minced garlic and cook until fragrant.
  3. Season the lamb shoulder with salt and pepper, then brown it in the same skillet on all sides.
  4. Transfer the saut?ed onions and garlic to a slow cooker. Layer in sweet potatoes, browned lamb, chickpeas, diced tomatoes, cinnamon, cumin, and vegetable broth.
  5. Cover and cook on low for 6 to 8 hours until the lamb is tender.
  6. Shred the lamb in the pot using two forks; serve hot over couscous or rice.
