  • 2 lbs boneless lamb shoulder
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup dried apricots, chopped
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 4 cups low-sodium beef or vegetable broth

Instructions

  1. Prepare your ingredients by dicing the onion and mincing the garlic. If using dried chickpeas, soak them overnight.
  2. In a skillet over medium-high heat, sear the lamb on all sides until golden brown.
  3. Transfer the seared lamb to the slow cooker and add onions, garlic, chickpeas, and apricots. Sprinkle spices on top.
  4. Pour in enough broth to cover the ingredients (about 4 cups) and stir gently.
  5. Cover and cook on low heat for 6-8 hours or high heat for 4-5 hours.
