  • 2 lbs boneless, skinless chicken thighs
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 can (14 oz) full-fat coconut milk
  • 3 tbsp korma curry paste
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by chopping the onion and mincing the garlic and ginger.
  2. Optional: Saut? the onion in a skillet until translucent for added depth of flavor.
  3. In the slow cooker, layer chicken thighs at the bottom. Add saut?ed onions (if using), garlic, ginger, korma curry paste, salt, pepper, and pour in coconut milk.
