  • 4 cups frozen sweet corn
  • 1 cup sharp cheddar cheese, grated
  • 6 slices thick-cut bacon
  • 8 oz cream cheese
  • 1 medium onion, finely chopped
  • 2 tbsp butter
  • Salt & pepper to taste

Instructions

  1. Cook the bacon in a skillet until crispy. Drain on paper towels.
  2. In a slow cooker, combine frozen corn, crumbled bacon, cream cheese, chopped onion, butter, salt, and pepper.
  3. Stir in half of the grated cheddar cheese and mix well.
  4. Cover and cook on low for 4 hours or high for 2 hours until heated through.
  5. Before serving, stir well and top with remaining cheddar cheese; cover for about 10 minutes to let it melt.
