  • 3 medium leeks (white and light green parts only)
  • 4 medium Yukon Gold potatoes (about 1.5 lbs), diced
  • 2 tablespoons butter
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Clean the leeks under cold water, slice them thinly.
