  • 1 lb shrimp, peeled and deveined
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup carrots, thinly sliced
  • 4 green onions, chopped
  • 4 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil

Instructions

  1. Cook lo mein noodles according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large skillet over medium-high heat, add a splash of oil and saut? bell peppers and carrots until tender-crisp (about 3 minutes).
  3. Add shrimp and minced garlic to the skillet. Cook until shrimp are pink and opaque (approximately 5 minutes).

  5. Gently toss in cooked lo mein noodles until evenly mixed with the sauce.
