- 8 oz spaghetti
- 2 salmon fillets (approximately 6 oz each)
- 1/2 cup fresh basil pesto
- 1 cup cherry tomatoes (halved)
- 1/4 cup grated Parmesan cheese
- Zest of 1 lemon
- Salt and pepper to taste
- 2 tbsp olive oil (for saut?ing)
Instructions
- Cook the spaghetti in salted boiling water until al dente according to package instructions. Drain and reserve some pasta water.
- Preheat the oven to 375?F (190?C). Season salmon fillets with salt and pepper, place on a baking sheet lined with parchment paper, and bake for 15-20 minutes until flaky.
- In a large skillet, heat olive oil over medium heat. Add halved cherry tomatoes and saut? for about 5-7 minutes until softened.
- Toss the cooked pasta into the skillet with tomatoes. Stir in basil pesto, adding reserved pasta water if needed for consistency.
- Flake baked salmon into the pasta mixture along with lemon zest, gently folding everything together.
- Serve immediately topped with grated Parmesan cheese.
