Ingredients
- 4 cups kale, chopped
- 2 salmon fillets (approximately 6 oz each)
- 2 tbsp extra virgin olive oil (divided)
- 2 tbsp fresh lemon juice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ? cup walnuts or almonds, toasted
- 1 tsp Dijon mustard
- 1 tsp honey
Instructions
- Preheat oven to 400?F (200?C). Line a baking sheet with parchment paper.
- Season salmon fillets with salt and pepper, drizzle with 1 tbsp olive oil, and place skin-side down on the baking sheet. Bake for 12-15 minutes until cooked through.
- While salmon cooks, wash and chop kale into bite-sized pieces and place in a large bowl.
- Add halved cherry tomatoes and diced cucumber to the kale.
- In a small bowl, whisk together remaining olive oil, lemon juice, Dijon mustard, and honey until emulsified.
- Once salmon is done cooking, flake it into larger pieces and add to the salad bowl along with toasted nuts.
- Drizzle dressing over salad and toss gently until combined. Serve immediately.
