  • 4 medium Russet potatoes
  • 2 tablespoons olive oil
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crispy bacon bits
  • 1/2 cup sour cream (for serving)
  • 1/4 cup sliced green onions (for garnish)

Instructions

  1. Preheat oven to 400?F (200?C).
  2. Scrub and dry the potatoes; poke holes all over with a fork.
  3. Rub each potato with olive oil and salt. Bake directly on the oven rack for 45-60 minutes until tender.
  4. Allow potatoes to cool, then slice in half lengthwise and scoop out some flesh.
  5. Brush the insides with olive oil again, fill with cheese and bacon bits.
  6. Return to the oven for another 10-15 minutes until cheese is bubbly and golden.
