- 2 cups shelled pistachios, coarsely chopped
- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup water
- 1 tsp ground cinnamon
- 2 tbsp fresh lemon juice
Instructions
- Preheat oven to 350?F (175?C) and grease a 9×13 inch baking dish.
- In a food processor, pulse the pistachios with sugar and cinnamon until coarsely chopped.
- Layer six sheets of phyllo in the baking dish, brushing each with melted butter.
- Spread half of the pistachio mixture over the phyllo layers.
- Add six more butter-brushed phyllo sheets, then top with the remaining pistachio mixture.
- Finish with six more butter-brushed phyllo sheets and cut into diamond shapes.
- Bake for 45 minutes until golden brown; meanwhile, make the syrup by boiling sugar, water, and lemon juice for ten minutes.
- Pour hot syrup over the baked baklava and let cool before serving.
