  • 2 cups red bell peppers, finely diced
  • 1 cup green bell peppers, finely diced
  • 2 cups granulated sugar
  • 1 cup apple cider vinegar
  • 1 package (1.75 oz) pectin
  • 1/4 tsp salt

Instructions

  1. Wash and finely dice the bell peppers.
  2. In a saucepan over medium heat, combine the diced red and green bell peppers with sugar and apple cider vinegar. Cook for about 10 minutes until softened.
  3. Add pectin while stirring continuously until dissolved.
  4. Stir in salt and simmer for an additional 5 minutes.
  5. Pour hot jelly into sterilized jars, seal tightly, and allow to cool before refrigerating.
  6. Serve chilled on cheese boards with crackers or baguette slices.
