  • 1 medium shallot, finely chopped
  • 3 cloves garlic, minced
  • 14 oz canned whole tomatoes (preferably San Marzano)
  • ½ cup vodka
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions until al dente; drain and set aside.
  2. In a skillet over medium heat, warm olive oil and sauté shallots and garlic until fragrant (about 2 minutes).
  3. Add canned tomatoes (with juices) and break them up gently; let simmer for 5 minutes.
  4. Stir in vodka and allow it to bubble away for another 5 minutes.
  5. Reduce heat and mix in heavy cream and grated Parmesan until well combined; season with salt and pepper.
  6. Toss the drained penne into the sauce until evenly coated; serve immediately with extra Parmesan if desired.
