  • 2 (4 oz each) wild-caught salmon fillets
  • 1/4 cup all-purpose flour
  • 2 tbsp butter
  • 2 fresh lemons (zest and juice)
  • 2 tbsp capers
  • 2 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. 1. Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper, then dredge lightly in flour.
  2. 2. In a large skillet, heat 2 tablespoons of butter over medium-high heat until melted.
  3. 3. Place the salmon skin-side down in the skillet. Cook for about 4 minutes until golden brown. Flip gently and cook for an additional 3 minutes.
  4. 4. Remove the salmon from the skillet and set aside on a plate.
  5. 5. In the same skillet, add minced garlic and capers, cooking for about 1 minute until fragrant.
  6. 6. Pour in chicken broth and fresh lemon juice, scraping up any bits stuck to the pan. Simmer for 2 minutes until slightly reduced.
  7. 7. Return the salmon to the skillet along with any juices from resting on your plate. Add remaining butter and simmer for another minute.
  8. 8. Serve hot, drizzled with sauce and garnished with chopped parsley.
