  • 1 1/2 cups oat flour
  • 1 tsp baking soda

  • 1/3 cup honey or maple syrup
  • 2 large eggs
  • 1/3 cup melted coconut oil

Instructions

  1. Preheat your oven to 350?F (175?C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Whisk in the eggs, melted coconut oil, honey (or maple syrup), and salt until combined.
  4. In another bowl, whisk together oat flour and baking soda; then fold into the wet mixture until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool before slicing.
