  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1 cup shredded sharp cheddar cheese
  • 1 cup crispy bacon bits
  • ? cup sour cream
  • ? cup chopped green onions

Instructions

  1. Preheat oven to 400?F (200?C). Scrub the potatoes clean.
  2. Poke holes in each potato with a fork and bake for 45-60 minutes until tender.
  3. Allow potatoes to cool for 10 minutes, then slice in half lengthwise and scoop out the flesh, leaving a small border.
  4. Brush potato skins with olive oil and sprinkle with salt and pepper.
  5. Place cut-side up on a baking sheet, fill each skin with cheese and bacon bits, then bake for another 10-15 minutes until cheese is melted.
  6. Serve topped with sour cream and green onions.
