Instructions
- Preheat oven to 350?F (175?C) and line a baking sheet with parchment paper.
- Whisk together flour and baking powder in a bowl; set aside.
- In another bowl, beat softened butter and sugar until light and fluffy.
- Add egg yolk and vanilla extract; mix until well combined.
- Gradually add dry mixture to wet ingredients until just combined.
- Roll out dough on a floured surface to about 1/4 inch thick, cut into shapes ensuring you have pairs (one solid and one with a hole).
- Bake for 10-12 minutes or until edges are golden brown.
- Once cooled, spread jam on solid cookie bases and top with cut-out cookies. Dust with powdered sugar before serving.
