- 1/2 cup granulated sugar (plus more for filling)
- 2 large eggs
- 1/3 cup freshly squeezed lemon juice
- Zest of 1 lemon (about 1 tablespoon)
- Pinch of salt
Instructions
- Preheat your oven to 350?F (175?C). Grease an 8×8-inch baking dish or line it with parchment paper.
- In a mixing bowl, combine flour, granulated sugar, and cold butter. Mix until coarse crumbs form. Press into the bottom of the prepared baking dish.
- Bake crust for 15 minutes until lightly golden.
- In another bowl, whisk together eggs, remaining sugar, lemon juice, lemon zest, and salt until smooth.
- Pour the lemon mixture over the baked crust and return to the oven. Bake for an additional 20-25 minutes until set.
- Allow to cool completely before slicing into squares. Dust with powdered sugar if desired.
