Instructions

  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix the egg, milk, melted butter, lemon juice, and lemon zest until well combined.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined; do not overmix. Fold in the blueberries.
  5. Fill each muffin cup about two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Let cool slightly before serving warm.
