  • 1 lb boneless, skinless chicken thighs
  • 2 tbsp fresh ginger, grated
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp unseasoned rice vinegar
  • 2 tbsp cornstarch
  • 1 tbsp vegetable oil

Instructions

  1. Dice the chicken thighs into bite-sized pieces and gather all ingredients.
  2. Set the Instant Pot to saut? mode and heat oil. Add chicken pieces and cook until browned (about 5 minutes).
  3. Stir in minced garlic and grated ginger; saut? for an additional minute until fragrant.
  4. In a bowl, mix soy sauce, brown sugar, rice vinegar, and cornstarch. Pour over the chicken in the pot.
  5. Seal the lid and set to pressure cook on high for 8 minutes.
  6. After cooking, perform a quick release of steam. Stir well before serving over rice or veggies.
