  • 1 lb ground beef or turkey
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cans (14 oz each) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • Salt & pepper to taste

Instructions

  1. 1. In a large pot over medium heat, saut? the chopped onion in a splash of oil until soft. Add minced garlic and cook until fragrant.
  2. 2. Add the ground beef or turkey to the pot. Cook until browned, breaking it apart as it cooks.
  3. 3. Sprinkle in the curry powder and cumin; stir for two minutes to combine.
  4. 4. Pour in the canned tomatoes and kidney beans; mix well.
  5. 5. Let the chili simmer uncovered on low heat for 20 minutes to meld flavors.
  6. 6. Serve hot, garnished with fresh cilantro if desired.
