  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 3 large eggs
  • 1 cup whole milk (or almond/oat milk)
  • Zest of 1 orange
  • Zest of 1 lemon
  • 1 tsp vanilla extract
  • Coin wrapped in foil (for tradition)

Instructions

  3. In another bowl, beat eggs with milk, orange zest, and vanilla until smooth.
  4. Combine wet and dry mixtures gently until just mixed; avoid overmixing.
  5. Fold in the wrapped coin into the batter. Pour into the prepared pan.
  6. Bake for 35-40 minutes until golden brown and a toothpick comes out clean. Let cool before serving.
