Description

  • 1 lb medium shrimp, peeled and deveined
  • 8 small corn or flour tortillas
  • 2 cups shredded cabbage (red or green)
  • 2 limes, juiced
  • ? cup fresh cilantro, chopped
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 avocado, sliced

Instructions

  1. Rinse shrimp under cold water (if fresh) or thaw if frozen. Chop cabbage, dice avocado, and chop cilantro.
  2. In a bowl, combine shrimp with olive oil, cumin, chili powder, garlic powder, salt, and pepper. Let marinate for 10 minutes.
  3. Heat a non-stick skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and opaque.
  4. Warm tortillas in another pan or on an open flame until soft.
  5. Assemble tacos by placing cabbage on each tortilla, adding shrimp, avocado slices, and cilantro.
  6. Squeeze fresh lime juice over the top before serving.
