- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 medium zucchini, diced
- 2 cups crushed tomatoes (canned)
- 2 cups low-sodium vegetable broth
- 1 cup black beans (canned, rinsed)
- 1 cup kidney beans (canned, rinsed)
- 2 tbsp chili powder
- 1 tsp ground cumin
- Salt & pepper to taste
Instructions
- Prepare ingredients by dicing onion, bell peppers, and zucchini; mince garlic.
- In a large pot over medium heat, add olive oil. Saut? onions until translucent (about 5 minutes), then add garlic and cook for another minute.
- Stir in bell peppers and zucchini; saut? until softened (around 5 minutes).
- Add crushed tomatoes and vegetable broth; mix well to combine.
- Season with chili powder, cumin, salt, and pepper. Let simmer on low heat for about 20 minutes.
- Stir in black beans and kidney beans until heated through; serve hot.
