- 1 1/2 cups graham cracker crumbs
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1/2 cup sour cream
- 3 large eggs
- 1/4 cup unsulfured molasses
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
Instructions
- Preheat oven to 350?F (175?C). Line an 8×8 inch baking dish with parchment paper.
- In a bowl, combine graham cracker crumbs, brown sugar, and melted butter. Press into the bottom of the prepared pan.
- In another bowl, beat cream cheese until smooth. Gradually add granulated sugar until fluffy. Mix in sour cream, adding eggs one at a time, followed by molasses, ginger, cinnamon, and nutmeg until well combined.
- Pour half of the cheesecake mixture over the crust. Drop spoonfuls of the remaining mixture on top and swirl with a knife.
- Bake for 30-35 minutes or until set but slightly jiggly in the center. Cool completely before refrigerating for at least two hours.
- Cut into squares and serve chilled.
