Ingredients

  • 8 oz rotini pasta
  • 1 cup fresh corn kernels (or frozen)
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice (about 2 limes)
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 1 tsp chili powder
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente (8?10 minutes), then drain and rinse under cold water.
  2. If using fresh corn, grill it over medium heat until charred (about 5 minutes per side), then cool and cut off the kernels.
  3. In a large bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  4. Add pasta, grilled corn, red onion, cilantro, and feta cheese to the dressing; toss gently to combine.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving.
