- 1 cup sliced chicken breast or tofu
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 2 green onions, chopped
- 3 cloves garlic, minced
- 2 shallots, minced
- 2 tbsp low-sodium soy sauce
- 2 tbsp oyster sauce (or mushroom sauce for vegetarian)
- 1 tbsp Sriracha or chili paste
- 2 tbsp vegetable oil
Instructions
- Soak the rice noodles in hot water until al dente, then drain.
- Slice the chicken or cube the tofu and season lightly with salt and pepper.
- Heat oil in a large skillet or wok over medium-high heat. Add garlic and shallots; saut? until fragrant.
- Stir-fry the chicken or tofu until cooked through (about 5-7 minutes).
- Add bell peppers and carrots; stir-fry until tender-crisp (3-4 minutes).
- Toss in drained noodles along with soy sauce, oyster sauce, and Sriracha; mix well for another 2 minutes. Serve hot.
