  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 4 cups fresh broccoli florets
  • 1 cup teriyaki sauce
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar

Instructions

  1. Slice the beef chuck roast into bite-sized pieces.
  2. In a bowl, whisk together teriyaki sauce, soy sauce, minced garlic, brown sugar, and grated ginger until well combined.
  3. Place sliced beef in the bottom of the crockpot and pour half of the sauce mixture over it. Top with broccoli florets.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. About 30 minutes before serving, add fresh broccoli to maintain its crunch.
  6. Stir well before serving over steamed rice or noodles; drizzle with extra sauce if desired.
