- 3 lbs beef chuck roast
- 4 dried guajillo chilies
- 1 medium onion, chopped
- 6 garlic cloves, minced
- 2 tsp cumin powder
- 2 tsp dried oregano
- 4 cups low-sodium beef broth
- 2 tbsp fresh lime juice
Instructions
- Toast the dried guajillo chilies in a dry skillet over medium heat for 2-3 minutes until fragrant.
- In a blender, combine toasted chilies, onion, garlic, cumin powder, oregano, lime juice, and 1 cup of beef broth. Blend until smooth.
- Place the beef chuck roast in the crock pot and pour the chili mixture over it. Add remaining beef broth.
- Cover and cook on low for 8 hours or high for 4 hours until the meat is tender.
- Shred the beef using two forks and serve in warm corn tortillas topped with diced onions and fresh cilantro. Serve with consom? on the side.
