- 1 cup sauerkraut, rinsed and drained
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded Swiss cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tbsp Thousand Island dressing
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Saut? diced onions and minced garlic until fragrant and translucent (about 3 minutes).
- Add chopped corned beef to the pot and cook until slightly browned (approximately 5 minutes).
- Pour in the beef broth, then stir in rinsed sauerkraut and Thousand Island dressing. Simmer for another 5 minutes.
