- 8 oz fettuccine pasta
- 2 skinless salmon fillets (6 oz each)
- 2 tsp Cajun seasoning
- 1 cup heavy cream
- ? cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 2 cups fresh spinach
- 2 tbsp extra virgin olive oil
- Juice of 1 lemon
Instructions
- Cook fettuccine according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season salmon with Cajun seasoning and sear for about 4 minutes per side until cooked through. Remove from the skillet and flake into bite-sized pieces.
- In the same skillet, saut? minced garlic until fragrant. Add heavy cream, stirring until it begins to bubble.
