- 1/4 cup smooth peanut butter
- 3 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey or maple syrup
Instructions
- Cook the noodles according to package instructions until al dente. Drain and rinse under cold water until cooled.
- While the noodles cool, slice cucumbers, grate carrots, and slice green onions.
- In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey (or maple syrup), and sesame oil until smooth.
- In a large mixing bowl, combine cooled noodles with cucumber, carrots, and green onions. Drizzle with the sesame sauce and toss to coat evenly.
