Description

Chocolate Chip Red Velvet Whoopie Pies are a delightful fusion of soft red velvet cookies filled with creamy goodness and studded with chocolate chips. Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips
  • For the Cream Cheese Filling: 1 cup powdered sugar
  • 4 oz cream cheese, softened
  • 4 tbsp unsalted butter, softened

Instructions

  1. Preheat oven to 350?F (175?C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix sugar and vegetable oil until combined. Add eggs one at a time, followed by red food coloring and vanilla extract.
  4. Gradually mix dry ingredients into wet mixture until just combined. Fold in chocolate chips.
  5. Drop rounded tablespoons of batter onto prepared sheets about two inches apart.
  6. Bake for 10?12 minutes until set but soft in the middle. Cool on wire racks.
  7. For the filling, beat cream cheese and butter until smooth; gradually add powdered sugar.
  8. Once cookies are completely cool, spread or pipe filling onto half of them and sandwich with remaining cookies.
