  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 slices of deli ham
  • 4 slices of Swiss cheese
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 2 tablespoons butter (for sauce)
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat oven to 400?F (200?C). Pound chicken breasts between plastic wrap until about 1/2 inch thick.
  2. Layer each breast with ham and cheese, then roll tightly and secure with toothpicks.
  3. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each roll in flour, dip in egg, and coat in breadcrumbs.
