- 1 cup cooked white rice
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 cup low-sodium vegetable broth

- Salt and pepper to taste
Instructions
- Preheat oven to 400?F (200?C) and prepare a baking dish with nonstick spray.
- Halve the acorn squashes, scoop out seeds, and place cut-side up in the dish.
- Drizzle with olive oil and season with salt and pepper; roast for about 30 minutes until tender.
- In a skillet, heat olive oil over medium heat, saut? onion until translucent, then add garlic until fragrant.
- In a bowl, combine cooked rice, saut?ed onion and garlic, half of the mozzarella and cheddar, vegetable broth, salt, and pepper; mix well.
- Stuff each squash half with the cheesy rice mixture and top with remaining cheese; return to oven for an additional 15-20 minutes until bubbly.
